コロナ禍で厳しい経営が続く飲食業界だが、「ウィズコロナ」時代に適応した店舗づくりが始まっている。2020年秋にオープンしたTHE BEER HOUSE 恵比寿店がその一つだ。 同店では、さまざまな感染症対策装置を導入し、お客様に安心して世界中のビールを楽しんでいただく取り組みを行っている。その１つに新たに加わったのが、Gravioによる、CO₂濃度測定システムだ。店内のCO₂濃度を可視化することで、適切なタイミングで換気を素早くできるようになり、さらなる安心・安全な店舗づくりを実現した。

「ウィズコロナ時代」の店舗づくり
─ THE BEER HOUSEはどのようなコンセプトのお店ですか
根岸氏：世界各国130種類以上のビールを気軽に楽しめるビアバーとして、2020年秋にオープンしました。コロナ禍で経営母体の会社の主力事業である飲食イベントへの出店がほぼなくなり、新機軸の店舗として、会社で輸入しているビールを中心とした世界中のお酒を楽しんでいただく小さな店舗を展開していこうという考えのもとオープンした飲食店です。
─ 感染症対策対策をしっかり行われているそうですね
根岸氏：今後、飲食店において「ウィズコロナ」は重要なキーワードだと考えています。安心してお客様にビールと料理を楽しんでいただくことを大切に考え、体温の自動測定装置や店舗内の壁面や什器、グラスや椅子に至るまで備品の抗菌コーティングの実施、入口に設置した殺菌エアーミストによる全身殺菌、紫外線殺菌装置、そして早くから光触媒・除菌脱臭機を店内各所に設置するなど、我々が考えられる対策はほぼ取り入れています。
─ Gravioを導入された経緯はどのようなことだったのでしょうか
根岸氏：先ほどもお話ししたとおり、感染防止対策として可能であることはほぼ行っている自負はありますが、換気の目安となるCO₂濃度など、目に見える形のものがありませんでした。そんな折、ITに詳しい知人からGravioを聞き、アステリアに相談しました。
すると、CO₂センサーと濃度表示するLED表示パネルがセットでレンタルでき、ノーコードで操作ができるということで、導入に踏み切りました。
CO₂の見える化で、スタッフも自発的に換気を行うように
─ 実際導入してみての効果はいかがですか
根岸氏：現在（取材は2021年7月）は、緊急事態宣言を受けて、店内での飲食物の提供は行っておらず、テイクアウトのみの営業形態としています。このため、お客様を入れたときの効果はまだ測れていませんが、スタッフとともに品出し作業をしていると、気がつくとCO₂濃度が上がって要換気状態になっていることに気付かされることがあり、導入効果を実感しています。特に、スタッフが気がついて、自発的に換気を行うようになってくれたのは、CO₂濃度を見える化できた効果だと考えています。
このような形で見えなければ、換気の頻度や時間をルール化し、それをスタッフに徹底しなければなりませんが、何も言わなくともスタッフが動いてくれるようになったのは、店長として負担も減り、ありがたいことだと感じています。
─ 機器の設置についてはいかがでしょうか
根岸氏：一般的なCO₂濃度測定器と異なり、センサー部分と表示部分、制御するエッジコンピュータが分かれているので、設置の自由度が高いのはメリットだと思います。現在はテイクアウトのみに絞っていますが、緊急事態宣言が終了したあとは、お客様に店内でビールを楽しんでいただけるようレイアウト変更をいたしますので、その際にも設置場所を悩まなくていいのはありがたいですね。
また、エッジコンピュータもコンパクトで設置場所を選ばないので、当店のような小さな店舗でも邪魔にならないのもメリットです。
店舗の快適性や安全性を高めるために活用していきたい
─ 今後の展開はどうお考えでしょうか
今後、多店舗展開を考えており、その際には感染症対策の一つとして、Gravioを全店舗で導入していきたいと考えています。また、店舗の快適性などを考えて、温度センサーの設置も検討したいと考えています。
カメラによる店内の人数カウントもできると伺っていますので、例えば今の店舗内の人数をWebサイトで案内することで、密を避けながら、美味しいビールを楽しんでいただくような店舗づくりに活かせればという構想も持ち始めています。
